摘要：动物血液是畜禽屠宰加工的主要副产品,营养价值高,尤其含有血红素铁、生物活性肽等具备特定功能的成分,应用前景广阔。本文对来源于动物血液中的主要功能成分血红素铁、亚硝基血红蛋白、血浆蛋白粉、血红蛋白粉、生物活性肽、超氧化物歧化酶(superoxide dismutase,SOD)的制备和应用进行综述,以期为未来动物血液的研究和应用提供参考。
Animal blood is the major animal by-products from slaughterhouses,and has high nutritional value,especially contains heme iron,bioactive peptides and other components with specific functions,the application prospect is broad. This review summarized the preparation and application of heme iron,nitroso hemoglobin,plasma protein powder,haemoglobin powder,bioactive peptides,superoxide dismutase（SOD）from animal blood,with the hope of offering some references further researches and applications of animal blood.
