摘要:盐藻及提取物是我国已批准的新食品原料,其中主要的功效因子为β-胡萝卜素。与高等植物源和人工合成的β-胡萝卜素不同,盐藻中的β-胡萝卜素组分含有大量顺式(Z-)异构体,主要包括9Z-和13Z-异构体。基于此,文章分析了近年来我国盐藻及提取物保健食品应用研究情况:(1)盐藻源β-胡萝卜素组分的几何异构体组成测定;(2)盐藻源β-胡萝卜素组分视黄醇当量的确定;(3)盐藻源β-胡萝卜素在保健食品中使用量的安全性评估。本文在回顾盐藻研究历史的基础上,综述了盐藻源β-胡萝卜素的几何异构体组成检测方法、其视黄醇当量的确定、在保健食品中使用上限的安全性评估等方面的研究进展。这些信息对盐藻的开发和利用提供理论依据。
Dunaliella salina and its extracts are novel food materials approved in China. The major functional factor is β – carotene,but is different from the β-carotene from higher plants and artificial synthesis. The β-carotene fraction from D. salina contains a large number of Z-isomers,including 9 Z-and 13 Z-isomers. In this paper,the application and research situation of food supplement of Dunaliella salina and its extracts in recent years were analyzed in the follow areas :(1)The geometrical isomer fraction determination of β-carotene from D. salina;(2)The RAE determination of β-carotene from D. salina;(3)The safety assessment of the amount(especially UL)of β-carotene from D. salina used in foods. Based on the review of research history,this article outlines the progress in determination of geometrical isomer composition of β-carotene from D. salina,vitamin A equivalent evaluation,and safety amount limit of its use in foods. These information provide theoretical basis for the development and utilization of Dunaliella salina.
