摘要:羊肚菌是珍稀的药食两用真菌,有极高的营养价值和药用价值。多糖是羊肚菌主要的大分子活性物质,有免疫调节、抗肿瘤、抗氧化和抗衰老等生物活性。本文主要从羊肚菌多糖提取纯化、多糖组成分析、生物活性和构效关系等方面论述羊肚菌多糖。为羊肚菌多糖进一步研究与开发提供理论依据。
Morchella esculenta L. is a rare medicinal and edible fungus with high nutritional value and medicinal value.Polysaccharides are the main macromolecular substance with a wide range of physiological activities. Polysaccharides are the major active substances of most edible fungi which have biological activities such as immune regulation,anti-tumor,antioxidant and anti-aging and so on.This article mainly observed the current researches on Morchella’s polysaccharides from respects of compositional analysis of polysaccharides,the extraction and purification of polysaccharides,the biological activities and the structure-activity relationship. This paper mainly provided a theoretical basis for further research and development of the polysaccharides from Morchella esculenta L.
