摘要：对干制杏鲍菇子实体营养与功能成分进行分析测定,结果表明,杏鲍菇含蛋白质、灰分、膳食纤维和多糖丰富,分别为21.92%、6.34%、30.14%、4.90%,是具有较高营养价值和功能作用,兼具药食双效的食用菌。
Tbe main nutritive and functional components in Pleurotus eryngii were detenmined and analyzed, The results showed that Pleurotus eryngii contain a considerable amount of protein, minerals, dietary fiber and polysaccharose, of which contents are 21.92%,6.34%,30.14% and 4.9% respectively, it have higher nutritive and functional value, it is a edible fungi both food and medicine.
