摘要:在当前竞争激烈的餐饮市场中,"老字号"餐饮企业既面临严峻的生存考验,又面临难得的成长机遇,如何抓住机遇实现快速成长就成为企业界和理论界共同关心的问题。本文通过SWOT模型分析了北京"老字号"餐饮企业的生存现状,并在此基础上提出了有助于实现"老字号"快速成长的"三元互动"的良性运行机制,从而促进"老字号"餐饮企业生存和成长,并为政府的相关决策提供理论依据。
In the current fierce catering market competition, time- honored catering enterprises are not only facing tough test for survival, but also confronting rare chance for growth. How to grasp the opportunity and achieve rapid growth has become a problem of mutual concern among both industries and theoretical circle. The paper makes an analysis of the present situation of Beijing time- honored catering enterprises by adopting SWOT model. Based on this, the paper puts forward the benign operating mechanism of " three-unit interactivity" model that will be conducive to their rapid growth. This will promote the growth of time-honored catering enterprises and provide theoretical evidence for the related decision-making of the government.
