摘要:绿原酸是植物在有氧呼吸过程中经莽草酸途径形成的苯丙素类化合物,是人类饮食中含量最丰富、功能最强的多酚化合物之一。绿原酸可改善人类健康、提高食品营养和延长食品保质期,在食品添加剂领域有较大的应用潜力。本文综述了绿原酸的抗肥胖、抗糖尿病、降血压、抑菌和抗氧化活性及其作用机制,并探讨相关活性及绿原酸作为天然食用色素和稳定剂在食品添加剂中的应用前景,以期为绿原酸在食品添加剂中的应用奠定基础。
Chlorogenic acid is a phenylpropanoid compound formed by the shikimic acid pathway during aerobic respiration of plant,and it is one of the most abundant and functional polyphenolic compounds in human diet. It had been demonstrated that chlorogenic acid has an effect on improving human health,adding food nutrition values and extending food shelf life. It has great potential for application in food additive industry. This article reviewed antiobesity,anti-diabetic,hypotensive,bacteriostatic and antioxidant activities of chlorogenic acid and its performance mechanisms. The study discussed the relevant activities and the application prospect of chlorogenic acid as a natural food coloring and stabilizer.
