摘要:我国地大物博,藻类原料十分丰富。其种类多,是海洋和内陆水系有机物的主要生产者,也是无机物的天然富集者,目前多用于工业、食品、药品、化妆品等领域,是未来重要的食物资源。藻类原料使用历史悠久,有大量毒理学研究证实,藻类食用安全性较高。同时,随着国内外科学技术水平的提高,藻类的精加工、提取工艺不断完善,更加有效地提高了藻类原料的食用安全性。目前大量的研究证实,藻类富含β-胡萝卜素、藻蓝蛋白、不饱和脂肪酸、多糖等生物活性物质,藻类功效明确,在保健食品行业有非常广泛的应用前景。本文主要综述了藻类原料在我国保健食品中的合规性依据、应用于保健食品的现状、功效成分以及保健功能,以期为藻类原料应用于保健食品的深度发掘和开发利用提供参考。
China has a vast territory and abundant resources.Algae is a very rich raw material with many kinds,which is the main producer of organic matter in the ocean and inland water system,as well as the natural enrichment of inorganic substances.Algae raw material has a long history of use,and a large number of toxicological studies have proved that algae is safe to eat.At the same time,with the improvement of science and technology at home and abroad,the fine processing and extraction technology of algae are constantly improved,which more effectively improves the edible safety of algae raw materials.At present,a large number of studies have confirmed that algae is rich inβ-carotene,phycocyanin,unsaturated fatty acids,polysaccharides and other biological active substances,algae effect is clear,and has a very wide range of application prospectsin the health food industry.This paper mainly reviewed the compliance basis of algae raw materials in China's health food,the status quo of their application in health food,functional components and health care functions,in order to provide reference for the in-depth exploration,development and utilization of algae raw materials in health food.
