摘要：巴旦木因丰富多元的营养价值备受关注,以往报道多聚焦于其果仁,然而巴旦木果仁加工产生的副产物同样具备不可忽视的营养价值。巴旦木青皮作为生产副产物,其富含多酚、膳食纤维等生物活性成分,具备抗氧化、抑菌、保水、保油等多种功能。当下巴旦木青皮大多被用作动物饲料甚至直接丢弃,造成了高值副产物资源的浪费。为此,文章系统地梳理了巴旦木青皮的植物化学组分、生物活性并分析相关文献,旨在为巴旦木青皮在食品、药学等领域的后续拓展应用筑牢理论根基,促进其资源价值的充分释放与高效转化,实现资源的最大化利用与价值提升,为相关产业可持续发展提供助力。
Almonds have attracted much attention due to their rich and diverse nutritional value.Previous reports mostly focused on their kernels.However,the by-products generated during almond kernel processing also possess non-negligible nutritional value.As a production by-product,almond hull is rich in bioactive components such as polyphenols and dietary fiber and has various functions like antioxidation,antibacterial,water retention and oil retention.At present,most almond hulls are used as animal feed or even directly discarded,resulting in the waste of high-value by-product resources.Therefore,this paper systematically combs the phytochemical components and biological activities of almond hull and analyzes the relevant literature,aiming to lay a theoretical foundation for the subsequent expansion and application of almond hull in the fields of food and pharmacy,promote the full release and efficient transformation of its resource value,realize the maximum utilization and value enhancement of resources and provide assistance for the sustainable development of related industries.
